This is one of Shanxi province’s most famous dishes, but previously was mostly famous locally, then gradually expanded into the Taiyuan area, and gradually all of Shanxi. It has been improved and perfected gradually by various chefs across the dynasties and demonstrates the local Shanxi flavor through its use of certain materials, the cutting technique, the curing, and the seasoning.
People in Shanxi like vinegar and have special methods of cooking with vinegar as can be seen in lightly fried pork, which is golden-yellow in appearance, salty in taste with a vinegar smell, tender inside, just the right amount of juice, and of medium thickness.
